A bowl of ramen has three main components to it: the soup, the noodles, and the toppings. The soup is simply a miso-based (water and miso), which makes it salty--stock. Flavor-wise, the soup has no endearing quality to it besides being steamy hot. The noodles are your average thinly made egg-based-flour saimin--fresh. The problem with their saimin is their placement in the bowl. The chef thought it wise to place the saimin at the very bottom of the bowl--below the toppings--where the soup settles, which further cooks the already pre-cooked saimin, resulting in its over-cooked state. The worst thing anyone can do to a noodle is over cook it and turn it to mush, negating the purpose of shaping the noodles to begin with, which is to add texture to the soup. The toppings available to the customers are very limited. I was hoping that the topping selections are as vast as a pizza topping selection. You can add chicken, charsiu--more like regular pork roast instead of Chinese charsiu--seaweed, and some others I don't recall. I give this place 3 stars because I wasn't hoping and expecting much from this place. These are over priced noodles with some fresh ingredients on top. The soup here, by no means, do not come close to a chinese restaurant's soup. However, soup is soup, I was comforted and full by the time I reached the bottom of my bowl.

I really like ezogiku's ramen, their noodles are very flavorful on their own. I had the Sapporo Miso Ramen, which had a slice of pork and a fish cake on top of the egg noodles in a miso base that was full of bean sprouts, onions, and ground up pork. I found it a bit overly salty; perhaps the ground pork was over seasoned, but the flavor was bright and refreshing, even though I was burning my tongue all the way from the immense heat that the egg noodles and broth carried with them. I came here for lunch, and apparently I guess the dining hall isn't open at lunch, just the express window at the side, which was fine by me. The cashier at the front was very nice.

Food is okay for someone craving fast food without eating from a fast food chain! Portions for take out is fair. Must try: Kimchee Fried Rice, costs $5/$6-

I love ezogiku! When I was living in Washington I had dreams about coming home to eat here. Now that I am back home there are a bunch of new menu items... tomato ramen, sesame chicken, & different specials served all day & night. These new items are great, full of flavor & always piping hot. Although I can't overlook the classics. I have not found a better pork fried rice any where else. It is a total must have. The dashi here is also top notch, being that the stock simmers at least 24 hours. Nothing makes you feel better than that rich savory liquid filling an empty tummy. I particularly love the Pearl City location, great people with super personalities!
